I love hot porridge with honey and chopped up banana, but its just way too hot in Sydney to even think about cooking such a thing first thing in the morning, so here is my summer alternative… Summer Berry Overnight Oats.
I have seen lots of recipes popping up all over the internet for overnight oats recently, so I thought I would share my recipe. You don’t really need a recipe at all… just pop in whatever you fancy! You really can’t go wrong with your favourite mix of nuts, seeds, spices and fruits. I like to make a few jars at a time so I have more time to dilly dally in the morning before I head off for work.
Summer Berry Overnight Oats
- 1/2 cup oats
- 3/4 cup coconut (or almond) milk
- 1 tbsp chia seeds
- 1 tbsp ground flaxseeds
- 1 tbsp chopped almonds
- a sprinkle of cinnamon
- 1 handful of frozen berries
- a dash of honey (optional)
- a jar (I like to recycle old jars but you can get some fancy ones from Amazon)
I’m a big believer in organic food… so I like to use organic ingredients whenever I can.
Tip all your ingredients into your jar.
Pour the milk over the ingredients. You can add the dash of honey here for some extra sweetness… I find that the natural sweetness of the fruit is enough for me.
Put the lid back on and give your jar a good shake to mix up all your ingredients.
Pop it in the fridge overnight and voila… a delicious light summery breakfast to start the day right!
